"Roasted Chickpeas"

Roasted chickpeas are such a great alternative to a packet of chips in your childs lunch box...Not only are they a good source of fibre and protein, they are super easy to make and they are delicious - so delicious in fact that sometimes they don’t even make it into the lunch box πŸ™Š

Heres how I make mine:

Place 2 cups of dried chick peas in a large bowl and cover with water.  The chickpeas will double in size so make sure you have enough water in the bowl.  Cover the bowl and allow to sit overnight.  Drain the water and rinse the chick peas before you place them in a pot of boiling water and simmer for approx 1 hour. Drain in a colander and rise with cold water.

If you are using tinned chick peas you can skip the above step.

Place the chick peas in a bowl and toss with Olive Oil or Coconut Oil and a small amount of smoked paprika and ground cumin (you can really use any spices but this is our favourite) and a pinch of salt.  Place on a baking tray and bake in the oven at 170 degrees or 150 degrees fan forced for 1 hour.

These will keep in an air tight container for a few days.  I hope you and your kids enjoy!
