"Almond Butter Fudge"

My daughter recently picked this recipe for Almond Butter Fudge out of her favourite cookbook “Deliciously Ella” by Ella Woodward. Thave been a few times when I’ve found her writing a shopping list for me to buy the ingredients for a recipe out of it. All of which turn out incredibly delectable and this one is no different…delicious, fudgelicious, sweet, melt in your mouth goodness!

The recipe will make approx. 20 pieces which is possibly not enough ;)

400 grams of Medjool dates, pitted
10 tablespoons Almond Butter (you can make your own or I used bought one with Chia seed because I didn’t have any already made)
4 tablespoons coconut oil
3 tablespoons raw cacao powder

I also added ¾ cup walnuts - hazelnuts would be yummy too!

1.Place the dates in a saucepan with a little boiling water. Allow to cook for 5 minutes until they are really soft and sticking together. If there is any water left in the pan, drain it and set the dates to one side to cool off for a couple of minutes.
2.Place Almond Butter, Coconut Oil and Cacao powder in a food processor and add the dates in before blending for a minute or two until a sticky paste forms.
3.This is where I placed the mixture into a bowl and added the walnuts.
4.Line a roughly 25cm baking tray with baking paper and put the mixture in and place it in the freezer for at least 3 hours…if you can wait that long!

Store in freezer and when you want to enjoy a piece with your afternoon herbal tea or even as a pre workout kick, you can take it out and allow to sit for a few minutes before you enjoy it.
