"Tray Baked Chicken with Olives & Tomato"

I love a nice simple dish for dinner where you just get to throw everything into the one baking tray and this Donna Hay recipe is exactly that AND it gets a tick of approval from my little one and hubby!

We have with some baked Sweet Potato with Smoked Paprika and chopped Kale done in the pan with lots of lemon.

TRAY BAKED CHICKEN WITH OLIVES & TOMATO

INGREDIENTS: 

4 Chicken Breast Fillets approx 800g (I sub with Chicken Thigh)

500g Vine-Ripened Cherry Tomatos

1/2 Cup Mixed Olives

2 Small Bunch of Oregano

1 Tablespoon Lemon Rind

1 Tablespoon Lemon Juice

2 Tablespons EVOO

Sea Salt & Cracked Black Pepper

METHOD:

1. Preheat the oven to 220Β°C (425Β°F). Place the chicken in a large ovenproof baking dish. Top with the tomatoes, olives, oregano, lemon zest, lemon juice, oil, salt and pepper.

2. Cook for 18–20 minutes or until golden brown and the chicken is cooked. Serve with the pan juices. Serves 4.
