"Healthy mint chocolate slice"

Who doesn't love a mint chocolate slice?! Here is the perfect slice to have with your cup of tea minus the guilt.

A fantastic treat to take to any Christmas party and I guarantee it will be a hit. Can you guess the secret ingredient??

Base
1 cup of raw almonds
1 cup pitted medjool dates
1tsp Cocao powder
1 tsp chia seeds (optional)

Cream filling
1 avocado, pitted and peeled
3 tbsp coconut oil (melted)
4 tsp honey or rice malt syrup
1 cup soaked cashews (soaked for 12 hours)
10 drops of peppermint oil or extract)

Topping
3tbs cocao powder
3tbs coconut oil, melted
2 tbs honey or rice malt syrup

Method
Process base ingredients in a processor for a few minutes, until mixture is well combined. Place into a square dish lined with baking paper and flatten evenly on the bottom.
Add filling ingredients to processor and mix until smooth and creamy. Pour into dish and spread evenly. Place in freezer while making topping.
Mix the topping ingredients in small bowl until you have a smooth chocolate sauce. Pour into dish, spread evenly and place back in freezer and you are finished.
Keep frozen until ready to eat.
