"Get some Pork on your Fork"

Dinner last night…a few of my favourites!

Have you heard the Pork advertisement 6 – 2 – 2?? It recommends you cook your pork for 6 minutes on one side, 2 minutes on the other, rest for 2 minutes…well it really does work! I was cooking my pork incorrectly for so long but not now, fool proof grilled pork cutlets that are scrumalicious!

This is a pretty standard quick dinner for my family, it ticks all the boxes, protein, fats, carbs that will fuel the body! For this meal I used Kale, Broccoli, roasted Fennel & my favourite sweet potato! The fats came from homemade Aioli ~ the recipe was one we learnt at our Cooking Demonstration at Egg of the Universe last year. If you missed the recipe, here it is:

Place 1 Egg, a dash of Apple Cider Vinegar, Sea Salt and a squeeze of Lemon in a mixing jar and use a hand held blender to gradually mix in the olive oil. Store in a glass jar in your fridge to use at your convenience over the following 2 weeks.

Sometimes it doesn't need to be fancy, just keep it simple, healthy and delicious!
