So easy to make, packed full of protein, fats, fibre and antioxidants. An absolute family favourite.
Butter Chicken – Serves 2-3 😋🤤
4Tbs olive oil
1 brown onion finely diced
3 cloves garlic crushed
2tsp garam masala
1tsp ground coriander
1tsp ground ginger
1tsp ground cumin
1tsp ground paprika
1-2 pinches cayenne pepper
1tsp ground turmeric
3Tbs tomato paste
Juice of a lemon
400ml coconut cream
500g chicken breast
Method:
1️⃣ Heat oil in a large saucepan and cook the onion and garlic until translucent
2️⃣ Add all dried spices and a pinch of salt and pepper and fry for a further 20 seconds.
3️⃣ Reduce heat and add the tomato paste, lemon juice,coconut cream and bring up to a simmer.
4️⃣ Add the chicken and cover with lid. Cook for 15-20 mins or until chicken is cooked through.
5️⃣ Serve with cauliflower rice or over steamed vegies.
Note – I pureed my sauce before adding chicken so the kids wouldn’t complain about onion 🙄😂
