"Prawn, avocado and mango salad"

It seriously doesnโ€™t get better than this for a super healthy summer dish! โ˜€๏ธ๐ŸŒป

This amazing recipes included 3 of my favourite things! Prawns, avocado and mango โ€“ yum!!!! ๐Ÿค๐Ÿฅ‘๐Ÿ‘๐Ÿ˜‹

Ingredients (serves 4) 
๐Ÿ”บ4 handfuls mixed lettuce leaves
๐Ÿ”บ2 mangoes, cut into cubes
๐Ÿ”บ1/2 red onion, thinly sliced
๐Ÿ”บ20 cooked prawns, peeled and deveined
๐Ÿ”บ2 avocados, cut into cubes
๐Ÿ”บ1 handful coriander leaves, chopped
๐Ÿ”บ1 long red chilli, chopped (optional)

Dressing:
๐Ÿ”บ2 Tbsp white balsamic vinegar (I use apple cider vinegar)
๐Ÿ”บ6 Tbsp extra virgin olive oil
๐Ÿ”บ1 Tbsp honey (I use a tsp or leave out completely)
๐Ÿ”บ1/2 Tbsp wholegrain mustard

Method ๐Ÿ“•

๐Ÿ”บIn a large bowl or on a platter, arrange lettuce, mango, onion, prawns and avocado.
๐Ÿ”บTo make the dressing, shake ingredients in a jar until combined. Taste and adjust to your liking. Pour over salad, and sprinkle with coriander leaves and chilli.
