"Prawn, avocado and mango salad"

It seriously doesn’t get better than this for a super healthy summer dish! β˜€οΈπŸŒ»

This amazing recipes included 3 of my favourite things! Prawns, avocado and mango – yum!!!! πŸ€πŸ₯‘πŸ‘πŸ˜‹

Ingredients (serves 4) 
πŸ”Ί4 handfuls mixed lettuce leaves
πŸ”Ί2 mangoes, cut into cubes
πŸ”Ί1/2 red onion, thinly sliced
πŸ”Ί20 cooked prawns, peeled and deveined
πŸ”Ί2 avocados, cut into cubes
πŸ”Ί1 handful coriander leaves, chopped
πŸ”Ί1 long red chilli, chopped (optional)

Dressing:
πŸ”Ί2 Tbsp white balsamic vinegar (I use apple cider vinegar)
πŸ”Ί6 Tbsp extra virgin olive oil
πŸ”Ί1 Tbsp honey (I use a tsp or leave out completely)
πŸ”Ί1/2 Tbsp wholegrain mustard

Method πŸ“•

πŸ”ΊIn a large bowl or on a platter, arrange lettuce, mango, onion, prawns and avocado.
πŸ”ΊTo make the dressing, shake ingredients in a jar until combined. Taste and adjust to your liking. Pour over salad, and sprinkle with coriander leaves and chilli.
