"Vegetable and lentil curry"

Sometimes you just feel like a hearty vegetarian meal. I have been trying to cut down my meat intake of late so have been searching for yummy vegetarian meals that are still loaded with protein.

Obviously eggs are a great non meat source of protein but lentils are also high in protein and fibre. Win, win!

I whipped up this curry last night and it was so delicious and filling and I wanted to share it with you. Obviously you can put in any vegetables that you like and I substituted Cauliflower for pumpkin and beans for broccoli.
