"Cilantro lime chicken with cauliflower rice"

This recipe is fantastic for lunch or dinner. You can always make extra for dinner and prepare a few lunch containers for work the next day. Bonus 馃憤
What I also love about this meal is that it鈥檚 packed full of goodness, full of wholefoods & good fats, totally satisfying and super tasty.

Cilantro lime chicken with cauliflower rice 馃槏
Ingredients 馃搩
For the Chicken
路         1 lb. boneless, skinless chicken breast
路         2 tablespoons olive oil
路         salt and pepper, to taste
路         录 cup lime juice (1-2 limes depending on how juicy they are)
路         鈪 cup fresh cilantro, chopped
路         2 teaspoons minced garlic
路         鈪 teaspoon sea salt
路         陆 teaspoon honey 

For the Cauliflower Rice
路         2 tablespoons olive oil
路         3 cups cauliflower rice
路         2 teaspoons garlic powder
路         1 teaspoon ground cumin
路         鈪 sea salt
路         陆 cup black beans
路         录 cup red onion, raw

For the Bowls
路         1 cup cherry tomatoes, halved
路         1 avocado, chopped

Instructions 馃搼

For the Chicken
1.    First, heat olive oil in large skillet over medium heat.
2.    Add chicken to the pan and cook over medium heat for 5-8 minutes on each side.
3.    Let cool for 15-20 minutes before slicing. Slice chicken and set aside.
4.    Add the rest of the chicken ingredients into a large bowl. Mix well.
5.    Place sliced chicken to the bowl and toss with dressing. Refrigerate.
For the Cauliflower Rice
1.    Heat olive oil in a large skillet over medium heat. Add riced cauliflower and spices and cook for 5 minutes. Then, add in black beans and saut茅 for another 2. Finally, add in red onion and mix.
For the bowls
1.    Place chicken, cauliflower rice, 录 cup tomatoes, 录 of an avocado in to a bowl.
