Charred Avo & eggs

Serves 2


1 red capsicum

4 spring onions

½ ripe avocado


1 sweet potato

2 large free range eggs

2 TBS cottage cheese

½ fresh red chilli (optional)

A few sprigs of soft fresh herbs such as flat parsley, mint or coriander
