"Pork Fillet with roast garlic, fennel & apples"

If you like fennel this one is a beauty.

I made this a few nights ago and it was delicious :)

Pork Fillet with roast garlic, fennel & apples

Ingredients

1 tablespoon sea salt

1 lemon, zested

2 teaspoons fennel seeds

4 pork fillets depending on how many you are feeding

2 fennel bulbs, trimmed, quartered

1 garlic bulb, halved

330ml apple cider

3 Pink Lady apples, halved

 Steamed baby broccoli, to serve  

Method

Rub lemon zest, salt and fennel onto pork fillets and sit for ½ hr on a covered plate outside the fridge

Meanwhile, heat to oven170C. Arrange the fennel and garlic around the pan. Pour apple cider over fennel. Cover tightly with foil and roast for 1 hour. Remove the foil. Add the apple and roast for a further 30 mins.

Pan fry pork fillets until mostly cooked and wrap in alfoil to rest

Slice the pork and serve with fennel, apple, garlic, baby broccoli and potato mash if desired.

Drizzle apple cider vinegar juices over the pork fillet.
