"Left overs lunch idea!"
This lunch absolutely ROCKED MY DAY and it took me less than 3 minutes to throw together!
For those of you who are time poor which let's face it, that's probably most of you, cooking an additional serve of protein and/or veg at dinner times is an awesome way to ensure that you have a quick healthy lunch ready to go leaving less opportunity to be in a situation where you are stuck without a 👌🏼 meal and you end up eating something that isn't so 👌🏼
This lunch was a left over baked salmon steak from dinner, brown rice (which I keep cooked in the fridge for when I need it), roughly chopped uncooked Brocollini. I popped it all in the microwave for about 1 min, tossed in some parsley, salt and pepper and within 3 minutes my “fast food” was ready to chow down on! I can not express to you how freaking mouth watering this was!
Healthy and delicious doesn’t need to be time consuming, boring, flavourless or complicated beauties!
