"Mini Christmas Pudding Bliss Balls"

Wow your guests with a delicious, healthier version of Christmas pudding! ๐ŸŽ„๐Ÿฎ

๐Ÿ”บ1 cup dates
๐Ÿ”บ1 cup almonds
๐Ÿ”บ ยฝ cup pecans
๐Ÿ”บ ยฝ cup sultanas
๐Ÿ”บ ยผ cup dried cranberries
๐Ÿ”บ 1 TBSP orange zest
๐Ÿ”บ 1 TBSP lemon zest
๐Ÿ”บ 1 tsp cinnamon
๐Ÿ”บ 1 tsp ground ginger
๐Ÿ”บ 1 tsp nutmeg
๐Ÿ”บ currants or cranberries for decorating
๐Ÿ”น ยฝ cup raw cashews soaked for at least 3 hours or overnight
๐Ÿ”น 2 TBSP sugar free maple syrup
๐Ÿ”น 2 TBSP soy milk or almond milk
๐Ÿ”น 1 TBSP lemon juice
๐Ÿ”น 1 TBSP coconut oil
๐Ÿ”น drop of vanilla extract
1๏ธโƒฃ For the pudding: add the nuts, dried fruit, orange and lemon zest as well as the cinnamon, ginger and nutmeg to the food processor and blend for a few minutes until the mixture becomes sticky. Process the nuts first if you are wanting a finer texture
2๏ธโƒฃ Roll even sized balls and flatten the tops slightly
3๏ธโƒฃ For the frosting: add the cashews, maple syrup, milk, lemon juice coconut oil and vanilla to a blender and blend until smooth. Soaking the cashews really helps give a much smoother consistency. Make sure there are no lumpy bits from the cashews. You can pop the frosting in the fridge to help it firm a little before using it but I preferred to use mine straight away, so it could fall down the sides of the balls
4๏ธโƒฃ Decorate with three fresh currants or cranberries if you can find them
5๏ธโƒฃ Store in the fridge or freezer in a container with a lid. Enjoy!
