“Middle Eastern Bowl of Goodness!”

Finally gave some homemade falafel balls a go. Soooo easy...and I must say I am chuffed to report that they were absolutely delicious! These will be great to keep stored in the freezer as an easy last min meal.

I served them here with some Smoked Paprika roast Eggplant, Tabouli, Saurkraut, Hummus, Garlic Sauce, raw Red Cabbage, grilled Capsicum and sprinkle of hemp seeds. God damn it...how does food taste this freaking scrumptious!

Ingredients:

2 cups chickpeas
2 garlic cloves
1/2 medium Spanish onion
1/2 bunch flat leaf parsley
1 cup Collard Greens
2 tbsp Oat four
2 tsp Pink salt
1 tbsp ground cumin
1tsp ground coriander
Pinch Cardamom
Cracked Black pepper to taste
1 small red chilli
Olive oil for cooking

Method:

1. Whiz all ingredients in a food processor for a few minutes. Keep scraping down the sides and continue until all ingredients are well blended.
2. Scoop the mixture into tablespoon's worth and roll into a ball, squash slightly and fry them in a little oil. Watch closely as they cook fast. Turn over and remove from pan when golden.
