"Vietnamese rice paper rolls"

I made these last week and they were delicious. I used iceberg lettuce instead of cabbage and also added grated carrot.
You could put any type of salad to your liking in the rolls. I also accompanied the rolls with the Sarah Wilson sweet chilli sauce which took their flavour to a whole new level
Easy to make, healthy, filling and so yummy! Definitely a new favourite of mine! 
Sweet Chilli Sauce
3 gloves minced garlic
1 ½ TBS hot chilli flakes
½ cup apple cider vinegar
1/8 cup stevia granules
¼ cup water
¼ cup fish sauce
½ tsp sea salt
1 TBS arrowroot
2 TBS water (extra)
Bring all of ingredients to the boil (except arrowroot and extra water), then simmer for 5-10 mins until it reduces down slightly. Mix arrowroot and extra water into a paste and whisk through chilli mix towards end to thicken.
