"Super side dishes"

I am so obsessed with red cabbage at the moment! It is so easy to prepare and there are loads of super tasty side dishes you can make to accompany grilled meat or fish. 

Red cabbage also provides many health benefits. Some of these essential nutrient components include thiamin, riboflavin, folate, calcium, manganese, magnesium, iron, and potassium, as well as vitamin C, vitamin A, vitamin E, vitamin K, dietary fibre, and the B vitamins. Bonus!

Here are 2 of my favourite dishes to make with our little friend the red cabbage!

1. Broccolini slaw

1 tsp EVOO

1 bunch broccolini, sliced into strips

2 cups of woolworths coleslaw mix

½ lime juiced

Method 

Heat oil on low/med in fry pan

Add broccolini and cooked for 2-3 mins until slightly tender

Remove from heat and toss through coleslaw mix and lime juice + S &P to taste

Yummo! This really goes well with chicken, fish or pork.

2. Fennel and cabbage slaw
