"Nourish Bowl"

After spending the last week in Bali, my new obsession is the "Nourish Bowl"…if this isn't a dish that you are familiar with, essentially it is a bowl of absolute goodness that ticks all the boxes of a wholesome meal!  You can choose any or all of your favourites.  To get the most out of your bowl select some nutrient dense veggies, fruits, or another carbohydrate, healthy fats and a protein.  It is an awesome way to use up left overs too!

In this Nourish Bowl I used:

Some beautiful mixed lettuce with fresh herbs

Roasted Carrot and Sweet Potato dusted in Paprika (45 min in a 200 degree oven)

Grilled Chicken

Sunflower Seeds

Pepitas

Chickpeas

Beans

Heirloom Cherry Tomatoes

Im not usually a dressing person other than olive oil and lemon but am getting a little adventurous and starting to love my dressings.  Check this one out...Mix the following ingredients in a blender and add Salt and Pepper to your liking:

Half Avocado 

1/2 Tablespoon of Tahini

Juice of half a Lemon

Drizzle of EVOO

Paprika
